*সুন্দরবনের মধুর বৈশিষ্ট্য ও গুণাগুণ*

সুন্দরবনের মধুর উৎস বাদাবনের নানান লবণাম্বু গাছের ফুল, যেমন, খলিশা, বাইন, তোরা, গরাণ, ক্যাওড়া, ইত্যাদি। বসন্তকাল থেকে গ্রীষ্মকাল পর্যন্ত এইসব গাছে প্রচুর ফুল ফোটে। তাই সুন্দরবনে মধুর মরশুম মূলত মার্চ-এপ্রিল-মে মাস।
সুন্দরবনের জঙ্গলে যেসব লবণাম্বু গাছের ফুল ফোটে তাদের প্রত্যেকটির পুষ্পরস ও পরাগের স্বাদগন্ধ স্বতন্ত্র। সুন্দরবনের পাঁচমেশালি ফুলের মধুর স্বাদ ও ফ্লেভার এই সব ভিন্ন ভিন্ন ফুলের মধুর স্বাদগন্ধের যোগফল। এক্ষেত্রে উল্লেখনীয় বিষয় হলো, ক্যাওড়া ফুলের মধু স্বাদে বেশ টক। যে জঙ্গলে ক্যাওড়া গাছের সংখ্যা বেশি, সেখানকার মধু তাই টক-মিষ্টি স্বাদের হয়ে থাকে। সুন্দরবনের মধুতে হাল্কা টকভাব থাকাটা তাই অত্যন্ত স্বাভাবিক।

মধুতে জলীয় ভাগ বেশি থাকলে মধুর উপরিভাগে ফেনা জমার সম্ভাবনা থাকে। এধরনের মধুকে পাত্রে ঢালার সময় বা ঝাঁকুনি দিলেও এতে ফেনা উঠতে দেখা যায়। সুন্দরবনের মধুর ক্ষেত্রে এগুলো খুবই স্বাভাবিক ঘটনা। তবে মধুর ওপরে ফেনা জমলেই মধু খারাপ হয়ে গেছে মনে করার কোনো কারণ নেই। আপনি একটি পরিষ্কার শুকনো চামচ দিয়ে সেই ফেনা তুলে ফেলে দিতে পারেন।
এছাড়াও সুন্দরবনের মধুর বোতলে বাষ্প জমতে পারে। বোতলের ঢাকনা খোলার সময় তাই আপনাকে একটু সাবধান থাকতে হবে। নাহলে বাষ্পের চাপে ঢাকনা ছিটকে গিয়ে ছোটোখাটো অঘটন ঘটে যাওয়াও বিচিত্র নয়। সবচেয়ে ভালো হোলো, এই মধু কিনে আনার পর, দীর্ঘদিন ফেলে না রেখে নিয়মিত খেয়ে শেষ করে ফেলা।
কৃত্তিম উপায়ে সুন্দরবনের মধুর ঘনত্ব বাড়ানো বা তাকে ফেনামুক্ত করা সম্ভব। তবে তার জন্য মধুকে প্রসেসিং করতে হবে, মধুতে তাপ দিতে হবে। কিন্তু এটাও মনে রাখতে হবে মধুকে গরম করলে তার প্রাকৃতিক শর্করা ভেঙে গিয়ে হাইড্রক্সিমিথাইল ফুরফুরাল নামক এক ধরনের ক্ষতিকর যৌগ তৈরি হয়। তাই আমরা মধুকে কোনোভাবেই গরম করার বা প্রসেসিং করার পক্ষপাতী নই। আমাদের মধু তাই সবসময়ই র’ আনপ্রসেসড মধু, অর্থাৎ, কাঁচা মধু যাকে কোনোরকম তাপদায়ী বা রাসায়নিক প্রক্রিয়ার মধ্যে দিয়ে বাজারজাত করা হয় নি।
আমাদের কাছ থেকে সুন্দরবনের মধুর পার্সেল হাতে পাওয়ার পর তাই আপনাকে কয়েকটি বিষয় খেয়াল রাখতে হবে।
প্রথমত, পার্সেল খুলে মধুর বোতল বের করে কমপক্ষে দুতিন ঘন্টা অপেক্ষা করতে হবে। এই সময় বোতলটিকে ছায়াযুক্ত জায়গায় স্থিরভাবে রেখে দিতে হবে। তারপর ধীরে ধীরে সাবধানতার সাথে বোতলের ছিপি খুলতে হবে। রাস্তায় মধুর বোতলে ঝাঁকুনির ফলে সাদা ফেনা তৈরি হয়। এই ফেনা থিতিয়ে যাওয়া পর্যন্ত অপেক্ষা না করেই মুখ খুললে মধু ফেনিয়ে উঠে বোতল থেকে পড়ে যেতে পারে।
মাঝে মধ্যে মধুর বোতলের ঢাকনা খুলে ভেতরে জমা বাষ্প বের করে দিতে হবে।
শীতল ছায়াযুক্ত স্থানে মধুর পাত্রটিকে রাখতে হবে।
দীর্ঘদিন ধরে মধুর বোতলটিকে ফেলে না রেখে, নিয়মিত ভাবে মধু খেতে হবে। নিয়মিত খাঁটি, আনপ্রসেসড মধু খাওয়াটা অত্যন্ত স্বাস্থ্যকর অভ্যাস। (যারা সুগার রোগী, তারা চিকিৎসকের পরামর্শ নিয়ে পরিমিতভাবে মধু খেতে পারেন।)
