তুলাইপাঞ্জি একটি ভারতীয় চাল যা মূলত পশ্চিমবঙ্গে চাষ হয়। এই সুগন্ধি চাল উত্তর দিনাজপুর জেলার রায়গঞ্জ অঞ্চলে চাষ করা হয়। এছাড়া দক্ষিণ দিনাজপুর জেলাতেও চাষ করা হয়। ২০১২ সালে পশ্চিমবঙ্গ সরকার এই চালকে লন্ডন অলিম্পিকে ফুড ফেস্টিভ্যালে পাঠিয়েছিলো।
২০১৭ সালের জুন মাসে ভারত সরকার তুলাইপাঞ্জি চালকে পশ্চিমবঙ্গের বলে স্বীকৃতি দিয়েছে।

তুলাইপাঞ্জি নামের উৎপত্তি

মিহিদানার মতো এই ধানে লম্বা লম্বা সাদা রঙের সুঙ থাকে, সেইজন্য দূর থেকে তাকে সাদা তুলোর মত দেখায় তাই অনেকে এই ধানকে তুলাইপাঞ্জি নামে ডাকে । কেউ কেউ বলে এই চালের ভাত পেঁজা তুলোর নরম ও সাদা ধবধবে, মুখে দিলেই মিলিয়ে যায় তাই এই চাল তুলাইপাঞ্জি নামে পরিচিত। কেউ কেউ একে তুলাইপাঞ্জা বা শুধু তুলাই ও বলে থাকে। প্রতি মঙ্গলবার রায়গঞ্জের মোহিনীগঞ্জের হাটে এই চালের প্রচুর আমদানি হতো বলে এই চালের সাথে মোহিনীগঞ্জ নামটা যুক্ত হয়ে গেছে। কিন্তু বর্তমানে উন্নত মানের তুলাইপাঞ্জি চাল এই হাটে আসার আগেই বড় বড় পাইকাররা না নিয়ে বাইরে পাঠিয়ে দিচ্ছে, বাইরে এই চালের প্রচুর চাহিদা।

স্বাদে গন্ধে অতুলনীয় এই চালের খ্যাতি শুধু আমাদের রাজ্যে কিংবা দেশের মধ্যে সীমাবদ্ধ নেই দেশের বাইরে বিদেশে ও এই চালের নামডাক আছে। দেশের বাইরে বাংলাদেশ ছাড়াও জার্মানি, ইংল্যান্ড চিনের সংহাই প্রদেশ, আমেরিকার ফ্লোরিডা, ওয়েস্ট ইন্ডিজ প্রভৃতি স্থানে পৌঁছে গেছে।FIFA ওয়ার্ল্ড কাপ থেকে অলিম্পিক প্রভৃতি বড় বড় আন্তর্জাতিক ক্রীড়া প্রতিযোগিতাতেও এই চাল পাঠানো হয়েছে। ২০১২ সালে পশ্চিমবঙ্গ সরকার এই চালকে লন্ডন অলিম্পিকে ফুড ফেস্টিভ্যালে পাঠিয়েছিলো।

GI ট্যাগ প্রাপ্তি

কোনো কিছুর GI(Geological Identification) তমকা পেলে সেই চালের খ্যাতি আরো বেড়ে যায়। তুলাইপাঞ্জি চালের জন্য রাজ্য সরকারের পক্ষ থেকে 2005 সালে প্রথমবারের জন্য GI তকমা পেতে আবেদন করা হয়, শেষ পর্যন্ত অনেক আবেদন পরীক্ষা নিরীক্ষার পর 2018 সালে W.T.O(World Trade Organization) পক্ষ থেকে তুলাইপাঞ্জি চালকে GI তকমা দেওয়া হয়। যার ফলে আমাদের উত্তর দিনাজপুর জেলা তথা রায়গঞ্জের গৌরব আরো বেশি পরিমাণে বৃদ্ধি পেয়েছে।

চাষিরা সাধারণত ভাদ্র অশ্বিন মাসের দিকে এর চারা রোপন করে অগ্রহায়ন মাসের দিকে কেটে ফেলে। জল ও সার খুব সামান্য লাগে এই ধান চাষে। এই ধানে বিশেষ এক যৌগ থাকার জন্য এই চাল এতো সুগন্ধি হয় যার চাষে সামান্য পরিমাণই জল ও সার লাগে।

নতুন চালে ভাত একটু নরম ও তার সেন্ট বেশি হয়। পুরনোটায় ভাত ঝরঝরে ও সেন্ট কম হয়। আতপে পায়েস ও খিচুড়ি ভালো হয়। চালটা মূলত মাঝারি সরু আকৃতির। ভাত সুস্বাদু, নরম ও সুগন্ধি।

এই চালের ভাত করতে হলে হাঁড়িতে বা ডেকচিতে করতে হবে। জল ফুটে গেলে চাল দিতে হবে। একটু শক্ত থাকতে নামিয়ে জল ঝেড়ে চাপা দিয়ে রাখতে হবে। নাহলে চাল নরম হওয়ার জন্য ভাত গলে যেতে পারে।
